Eggplant

        Eggplant & Potato 

Ingredients

Eggplants (2) Medium size 
Onion (2) Medium size 
Tomato (2) Medium size
Potato (4 to 5) Medium size
Green Chili (2) Chopped
Ginger Garlic paste (1 Teaspoon)
Lemon (1 Tablespoon )
Tamarind Pulp (1 Teaspoon )
Salt (1/2 Teaspoon )
Red Chili powder (1/2 teaspoon )
Coriander powder (1/ 2 Teaspoon )
Cumin seeds (1/2 Teaspoon )
Black caraway {Kalonji} (1/2 Teaspoon )
Carom seeds  (1/2 Teaspoon )
Dry fenugreek leaves ( 1 Teaspoon )
Coriander leaves for presentation



METHOD

Take a pot  add oil it it then add chopped onion . Once Onions Color changed into light brown then add ginger garlic paste and green Chili. Cook it for 2 minutes & put chopped tomatoes .Cook it well .Now add your spices and Potatoes .Cook it for 1 minutes then add I cup of water and cover the pot with Lid. Cook it for 6 to 7 minutes and check the Potatoes after 6 to 7 minutes . Potatoes is cooked ( if Potatoes is not cook then add another half cup of  water. Cover it for 5 minutes more). Now add Eggplants in Potatoes & mix them well .Add half half cup of water and leave the Pot on medium flame for for 5 minutes. After 5 minutes add lemon juice and Tamarind Pulp in Eggplants and Potatoes. Cook it until oil comes on top of Eggplants and Potatoes curry then add dry fenugreek leaves.  Cover it for 2 minutes.





Yummy and delicious Eggplants and Potatoes recipe is ready. Garnish it with some coriander leaves. Enjoy Eggplants and Potatoes recipe with Roti and Salad.
