Eggplant's Yogurt
Ingredients
Eggplants (1)
Yogurt (half kg)
Onion (1 pcs)
Tomato (1 Pcs)
Chopped green chili (1 Teaspoon)
Chopped garlic (1 Teaspoon)
Lemon juice (1 Teaspoon)
Coriander leaves (For garnishing)
Cumin seeds (For frying)
Whole red chili (2)
Salt (1 Teaspoon)
Black pepper (1/2 Teaspoon)
Chat Masala (1 Teaspoon)
Oil (Half cup)
Method
Eggplant
Take clean and dry eggplant. Cut eggplant in round shape. Sprinkle some salt and black pepper powder over Eggplants. Now shallow fry eggplant in oil until their color change into light brown.
Yogurt
Make a mint yogurt ( click on the link)
Onion and tomato paste
Take a pan add 2 teaspoon of oil and chopped onion. Sauté onion for 2 minutes then add chopped tomato ,garlic , and lemon juice. Sauté them for 2 minutes then add 2 teaspoon of water. Cook this mixture until water evaporates.
Method for Cumin seeds fry
Take a pan add oil 4 to 5 teaspoon add cumin seeds and whole red chili. Fry them for 2 minutes.
Layering
Take a casserole
Put first of layer of roasted eggplants
Second layer of onion and tomato paste
Third layer of yogurt and sprinkle some snack spice over the yogurt .
In the last spread fry cumin seeds and whole red chili over the yogurt.
Garnish eggplant yogurt with fresh chopped coriander leaves.
